Susana Lein has farmed regeneratively for more than 3 decades using diverse cover crops without tillage, and saving seed for the majority of the farm's crops. Salamander Springs Farm (near Berea, KY) is known for its flavorful, nutrient-dense vegetables, fruits, cornmeal, popcorn & dry beans. Susana teaches regenerative agriculture and permaculture practices on the farm and for organizations throughout the eastern USA. She bred and developed the well-known resilient and productive KY Rainbow dent corn from inbred heirloom varieties of the lower Appalachians.
