Farmed regeneratively since 2002 using diverse cover crops without tillage, Salamander Springs Farm in Berea, KY, is known for its flavorful, nutrient-dense vegetables, fruits, cornmeal, popcorn & dry beans. Owner & farmer Susana Lein teaches regenerative agriculture and permaculture practices on the farm, and for organizations throughout the eastern USA. She also bred and developed the highly resilient and productive landrace corn, KY Rainbow dent, from inbred heirloom varieties of the lower Appalachians.
